I picked Pit up from school today and we went to Niwa Sushi at the Tampines MRT before taking the free shuttle bus to the Giant by the IKEA. Why? To purchase our first ever waffle maker! When we got home, Frunty had finished his homework with Amy and was ready for a swim. Then we made waffles together. It was so much fun. We modified the recipe and made the most delicious waffles I think I have ever had. Frunty hugged me so hard and was so grateful. He said these waffles were better than the ones at school...that he wasn't supposed to be eating!!!
Frunty and Pit's Sweet Potato Waffles
3/4 sweet potatoes, peeled, cooked and mashed
1 1/2 teaspoons coconut milk
1 teaspoon Orgran Egg Replacement mixed with 2 tbsp water
3/4 cup water
1/2 cup brown rice flour
1 teaspoon baking powder
1. Preheat waffle iron and brush with coconut oil when ready.
2. Combine all ingredients, mix until smooth.
3. Enjoy!
Ours were light and crispy and just awesome. We did not add sugar...they were naturally sweet. Tomorrow morning the kids have requested waffles and our homemade granola with fresh tropical fruits and a glass of calcium-fortified rice milk. Honestly, we are not missing gluten/soya/dairy/egg at all. The more recipes we modify, the more fun we are having. And none of us is scratching. Who could ask for anything more? Actually, one more waffle, please!

Animation
We went to the Science Center today to see the IMAX movie, The Forces of Nature. Pit closed his eyes throughout most of the movie. It was pretty impressive and the images of earthquakes, volcanoes and tornados were powerful. We did not expect to see an exhibition presented by Pixar as well. We purchased tickets which we somehow thought were for a movie about Pixar's 20 years. Instead, it was the movie UP in 3D which we all enjoyed.
Afterwards we headed to the waterworks play zone so the kids could cool off and then to the IMM mall for sushi and Giant, to purchase more fans. We do not like air-con at all but a lovely breeze from a fan helps cool down our rooms when need be. Pit fell asleep on the way home so I carried him to bed and then the three of us went for a short night swim. It was fun. We would not have done something like that before Amy began living with us. Now we can feel secure leaving Pit asleep with Amy there "just in case".
On Saturday Daddy and I went to TPS for some parent workshops. We enjoyed talking to Frunty's teacher. Afterwards, we headed to a SCUBA and Asian Food exhibition. There is so much going on here in Singapore. Amy babysat so we could investigate these exhibitions and we got excellent reports when we got home. A Saturday night with our kids at the local library was really a nice way to finish the day!

Zàijiàn
Well, the Calgarians have returned to the snowy west of Canada with suntans and hopefully sunny dispositions after a fun-filled week with us in Singapore. Yesterday at lunch, we discussed how they experienced most everything quintessential on this marvelous island: The Singapore Sling and Flyer, Zoo and Safari, Little India, China Town, Orchard Road, Sentosa Island and a torrential, equatorial rainstorm on the island of Pulau Ubin. They sampled Malaysian, Indonesian, Indian, Singaporean, Thai and Vietnamese dishes plus lots and lots of sushi and ice coffees galore! They have to come back because they missed the famous ice kachangs from one of the best places called Razzes. Oh well, not bad, not bad at all.
So we are back to being the 4 of us (plus Amy) again and are grateful for their visit and looking forward to our next guests! Hope you all had a wonderful Easter!

Vietnamese in Chinatown
We walked around Chinatown this morning with AMD and saw two very nice Chinese temples, then we had good vietnamese food.

Happy Easter
We had a really fun Easter yesterday which started the day before with decorating eggs that Amy dyed when we were out exploring a little island called Pulau Ubin. We got home after a day of cycling and experiencing torrential, equatorial downpours on this island that looks like Singapore did in the 60s before development hit like a tsunami.
Easter morning we woke up to a special breakfast: eggs and toast, a gigantic banana fried up and an Easter egg hunt. It continued to rain but that did not slow us down. After a rest and some champagne, we headed over to Market 58 for massages and a sushi lunch then jumped into two cabs and headed over to the Singapore Zoo and Night Safari. All 8 of us. We had a great time. Everyone loves the native performance at night. The fire breathers are incredible. Amy seemed happy to have joined us.
Today we met the Wiaceks in Little India for lunch and have come home to do homework. When they get back, we'll be heading to the pool if it doesn't start raining again (rainy season has really begun...three months late but whatever!) before going out for Thai tonight! Never a dull moment.
We also enjoyed Easter "hellos" from family on all sides. Wish you all could have been here to enjoy our first Easter in Singapore. But let's not be greedy...at least we had the Wiaceks which is a big gift in itself.

Fun at Sentosa
Today is Good Friday. Growing up, I was encouraged to be sad and morose and understandably so given the significance of this religious day. However, when you only have one week with your family, you have to take advantage of your time together to have fun...and that is just what we did! We took off to the little island, Sentosa, connected to Singapore by a monorail. If you have been reading our blog, you'll have seen it before.
There is lots to do on Sentosa including the almost completed Universal Studios. We did not go there but instead, directly to the luge where Daniel beat us all, twice! The second time, he had Pit between his legs but that did not slow him down as he rocketed his way down the mountain! At the top of the mountain, we stopped between rides to experience the Extreme Log Ride. This time, Pit exclaimed that he was not scared! We also saw a 4D pirate movie which was corny but perfect for little ones. It was pretty funny actually, starring none other than Lesley Nielson. Frunty laughed his head off! It's always fun to sit beside him.
Resting at the beach and enjoying sushi proved to be a good break before heading back to the mainland. As I type, two of my boys are asleep, and the other four are on the east coast with a bucket of beer and no doubt, a plate full of satays. My dad always argued, "why be sad on Good Friday because we know what happens on Sunday."
Happy Easter everyone!

Family from Calgary
We are really thrilled to have Uncle Andrew, Matthew and Daniel here as our second set of visitors! We have not seen them since Greece which was nearly two years ago. We really appreciate their visit and the fact that they came all this way only for one week. Good on them!
They arrived during the night and the very next morning, M and D helped me take Pit to school, taking turns running and cycling there and back as we only have two bikes right now. We stopped at Fengshan 85 where the boys had some noodles and we mixed several drinks: cane juice, lime juice and ice lemon tea, trying to make them less sweet. This was after we all had a big breakfast at home prepared by Amy!
Later in the day, Frunty, Pit, Amy and I met AMD at the Singapore Flyer. Afterwards, Frunty asked M, "Did you enjoy your flight?!" We were lucky that the rain showers were finished and blue skies and sun prevailed during our "flight". We learned that AMD had walked around town, visited Merlion and enjoyed a bumboat trip.
At 6pm we met the Daddy at Suntec mall and we all had a nice dinner in the food court. Most of us ordered sushi. Then two cabs took off from the mall. AMD and I were in the "massage" cab, headed for a treatment at Market 58. The "home" cab had the others who had to work and go to bed, respectively. What a really fun first day in Singapore and AMD are already talking about coming back for longer next time! Who doesn't love Singapore? I haven't met one person yet!
